Ingredients

• 1 small ripe breadfruit (about 1 and 1/2), washed, peeled and blended
• 1 medium sized onion, minced
• 3 garlic cloves minced
• 4 twigs of chives, chopped
• 1/2 sweet pepper, chopped
• 2 pimento peppers, chopped
• 2 big leave thyme, chopped
• a few rosemary leaves
• 2 chado beni leaves, chopped
• a few basil leaves, chopped.
• 1 teaspoon salt
• 1/2 teaspoon cayenne or any other pepper of choice
• oil for frying

Instructions

• in a large bowl, add breadfruit and seasonings mentioned. mix until well combined.
• allow to sit for at least 30 minutes to allow the flavours to be properly distributed in the the breadfruit, making it more flavourful
• on medium low heat, in a skillet, add oil and allow to heat.
• using a spoon, drop the mixture into the oil a little at a time. (be sure not to crowd the skillet to allow the fritters enough space to cook)
• fry until golden brown (roughly 5 minutes per side)
• once finished, serve with sauce or dipping of choice.
