This delicious Meat Pocket Grenadian Style can be found in any Grenadian or Caribbean pastry shop. It’s flaky crust infused with the well seasoned salami will have you going back for more.

Ingredients for the dough

  • 2 cups all purpose flour
  • 1/4 cup (4 ounces) shortening
  • 1/4 cup (4 ounces) margarine or butter
  • 1/8 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 cup very cold ice water (may need more or less)
  • 1/8 teaspoon cayenne or black pepper

Ingredients for the filling

  • salami grated (i used turkey sausage simply because i didn’t have salami)
  • green onion chopped
  • fresh thyme
  • grated cheese (optional)
  • 1 teaspoon grated onion
  • 1 teaspoon grated garlic

instructions for making the dough

  • in a large bowl, add flour, sugar and salt. mix well until combined. next cut in the margarine and the shortening until a crumbly texture is achieved.
  • slowly but quickly add very cold ice water until a sticky dough texture is formed. next place on lightly floured countertop and form into a dough. wrap with plastic wrap and place in fridge to rest for about 30 minutes.

Instructions for filling

  • in a bowl, add grated salami, pepper, grated onion and garlic, green onion and fresh thyme and mix well. set aside until ready to use.
  • once dough is rested, place on lightly floured countertop. form into a log or roll out into a rectangular shape (not too thin not too thick).
  • cut into equal squares (big or small). place the filling in the middle and add grated cheese if using.
  • take one side of the dough and cross it over to the other side or middle of the filling and do the rest of the side the same. you should get a pocket shape (hence the name)
  • place on baking sheet lined with parchment paper and egg wash the top. place in preheated oven of 375 degrees f. bake until golden brown (30-35 minutes)
  • remove from oven and allow to cool before serving.

Ingredients

  • 11/2 cups plain flour
  • 1/2 cup brown sugar
  • 1 teaspoon yeast
  • 1/4 – 1/2 cup water or milk
  • pinch of salt
  • 2 tablespoon of sugar
  • 1 tablespoon margarine plus 1 tablespoon melted
  • 1 tablespoon shortening

For the coconut filling

  • 1/2 cup water
  • 1/2 cup sugar
  • pinch of salt
  • cinnamon stick
  • 1 bayleaf
  • 1 teaspoon ground clove
  • 1/4 teaspoon grated nutmeg
  • 1 teaspoon vanilla or almond extract/essence
  • 2-3 drops of food coloring of choice

Instructions

  • preheat oven to 350 degrees f
  • in a large bowl, add flour, salt sugar, yeast, shortening and margarine. mix well until crumbly in texture. slowly add in warm water and mix until dough is formed. knead unto smooth. set aside, covering with a white tablecloth and allow to rest (for about 40 mins)
  • while dough is resting, move on to the coconut filling. in a skillet, add in water, spices, sugar, coconut and salt. mix until combined. allow to cook on medium high heat, keeping a careful eye on it. stir occasionally to avoid sticking to pan. once the coconut filling/mixture has cooked down (until hardly any water remaining about 15-20 minutes), remove from heat. add in coloring of choice and vanilla/almond extract. mix until well combined. allow to cool completely
  • next place dough unto a floured countertop and roll out into a rectangular shape. using a pastry brush, apply melted butter all over dough. place filling unto dough, being careful not to add to much or place it too close to the edge. roll dough with filling. seal the edges. place unto a baking sheet lined with parchment paper. using remaining melted butter to brush the top of the turnover or use an egg to create an egg wash.
  • place in preheated oven for about 30-35 minutes (that depends on the oven used). once baked, remove from oven and allow to cool completely before cutting and serving
  • enjoy!

Ingredients

For the dough

  • 21/2 cups plain flour
  • 4 tablespoons brown sugar
  • 2 tablespoons shortening, softened
  • 3 tablespoons margarine or butter, softened
  • 1/2-1 teaspoon salt (i use less as i don’t use plenty salt)
  • 3/4 cup warm water
  • 1 teaspoon yeast
  • 2 tablespoons oil

For the meat part

  • 3 turkey sausages grated/shredded (or 1 cup of grated salami)
  • 2 garlic gloves, grated
  • 1/2 of a small or medium onion, grated
  • 1/4 teaspoon cayenne or black pepper
  • a pinch of salt for added flavour
  • 1 cup grated cheese
  • 1 tablespoon oil

Other Ingredients

  • 1 tablespoon melted margarine/butter
  • rolling pin
  • extra flour for dusting counter top
  • baking sheet with parchment paper
  • pastry brush

Instructions

  • preheat oven to 350 degrees F
  • add sugar to warm water and stir until dissolve, next add in yeast and allow to sit for about 5-6 minutes to set.
  • next in a large bowl, add in flour, margarine, shortening, salt and oil. mix together until combined. make a well in the middle and slowly add in yeast mixture and mix until a dough is formed. knead for about 5-6 minutes until a smooth ball is formed. allow dough to sit in a warm place for about 15-20 minutes to allow the gluten to develop.
  • while dough is resting, in a skillet, add oil, grated sausage, grated onion and garlic and salt. mix well and allow to sautée for about 2-3 minutes to allow the flavours to fuse together. once done, remove from heat and sit as side
  • lightly dust counter top with some flour and place dough. dust the rolling pin with some flour and roll out into a rectangular shape (shouldn’t be too thick or too thin. i eye balled mine). next using pastry brush, brush melted butter/margarine all over dough. to half of the dough, add some cheese and the sausage mix, ending off with some more cheese on top.
  • next take the other half of the dough and place it over the filling and seal the edges so that the filling doesn’t escape. using a knife, make incisions or cut marks for easy cutting once the pastry is done(you can brush the top of the pastry with some butter at this time)
  • place in oven and bake for 25-30 minutes or until golden brown. (remember the baking time depends on the oven used). once baked, remove from oven and allow completely before slicing and serve
  • enjoy!
