Ingredients

  • green fig (banana)
  • 1 tablespoon oil
  • 1/2 medium purple onion
  • 1 teaspoon grated regular onion
  • 1 teaspoon grated garlic clove
  • salt
  • 1-2 tablespoons honey
  • 3 heaping tablespoons mayonnaise
  • 1 teaspoon minced parsley
  • 1 teaspoon minced chives
  • 1 teaspoon minced shadow beni
  • 1/2 cup each frozen corn and peas
  • 1/4 cup diced carrot
  • 1/4 teaspoon lime juice (optional)
  • 1 hard boiled egg finely chopped (optional)
  • 1 sweet pepper finely chopped

Instructions

  • start of by washing the figs thoroughly, remove top and bottom and slit the side of the fig.
  • to a pot of water add salt and oil. place fig/bananas in and cover to cook. be sure to keep on eye on the pot as you dont want the fig to over cook
  • while fig is cooking, prep other ingredients
  • once fig is finished remove from heat and drain. allow to cool
  • once cooled , cut into desired pieces add in the other ingredients and mix well. taste for flavour.
  • serve on its own or as a side
  • do enjoy!

P.s canned beans and corn can be used as well

Ingredients

  • 4-5 cups plain flour
  • 1 cup whole wheat flour (optional)
  • 4 tablespoons brown sugar
  • 2 teaspoons yeast
  • 1 cup warm water (plus 1/4 cup for the blending of the green banana)
  • 3 medium sized slightly ripe green banana/green fig cooked
  • 1/4 cup olive oil or coconut oil
  • 2 tablespoons shortening, margarine or butter

Instructions

  • preheat oven at 350 degrees F
  • place the 1/4 cup of water and green banana/fig in a blender and blend for about 30 seconds
  • to a mixer start off by adding 3 cups of plain flour, whole wheat flour, sugar, yeast, shortening and the blended bananas. on low speed, mix until well combined
  • next add in the olive oil
  • add in the rest of the water and allow bread to form a dough (about 8 minutes if using a kitchenaid)
  • add the additional reserved flour as needed
  • once finished, place dough in a lightly greased bowl and allow it to rest for about an hour or until it has doubled in size
  • once risen, punch in the middle and return to the mixer to mix for an additional 3 minutes. once down place on a floured counter and form into two loaves. place in pan and allow to sit for another 45 mins until doubled in size
  • next place in preheated oven for about 35-40 mins (more or less depending on your oven make) or until golden brown
  • once finished remove from oven and allow to sit in the pans for about 5 mins and then remove from pan, place on a cooling rack to cool completely
  • serve with any side of your choice(can be served hot as well)
  • enjoy!

Ingredients

  • 3 meduim green bananas or 2 large ones
  • 2 cups of full fat coconut milk (i used organic)
  • 21/2 cups of water
  • 1/4 teaspoon nutmeg
  • 2 cinnamon sticks or 1/4 teaspoon cinnamon powder
  • 1 tsp vanilla (optional)
  • 1/2 cup condensed milk or sugar (sweeten to your taste, you can also use condensed coconut milk)
  • a pinch of salt (optional )
  • 1 tablespoon of grated ginger

Instructions

  • blend green bananas with the water (30 secs on a high powered blender)
  • place pot on medium heat and pour in blended bananas makings sure to stir constantly to avoid lumps
  • bring to a boil
  • next add in coconut milk and spices. continue to stir
  • once the porridge is cooked (and you will tell by the change in colour) its time to add in the condensed milk. sweeten to your taste.
  • garnish with some grated nutmeg (opitional)
  • service hot
