This deliciously, flavourful, sweet dessert called Coconut Ginger Fudge , is the perfect addition to your sweet treat box and is famous around parties etc. Don’t hesitate to give it a try today.

Ingredients

  • 2 cups coconut milk
  • 1 tin sweetened condensed milk
  • 2 cups granulated sugar
  • 1 tablespoon butter or margarine
  • 1/4 -1/2 cup or more, freshly grated ginger
  • 1 teaspoon ground cinnamon powder
  • 1/4 teaspoon ground cloves
  • an 1/8 teaspoon salt
  • 1/2 teaspoon vanilla or almond extract

Instructions

  • in a large skillet on medium low heat, add coconut milk, condensed milk, sugar and margarine. Mix well until sugar and butter is melted into the mixture.
  • bring to a boil. once boiling, add grated ginger and give a good mix.
  • continue to mix to avoid mixture spilling over the pot unto the stove; as well as to avoid the mixture from getting burnt
  • once the mixture has started to move away from the sides of your skillet, take a bowl with cold water and drop a soft serve into it.
  • once it forms a soft ball, it’s ready. remove from heat, add the vanilla extract and mix well. allow to cool for about 3 minutes.
  • mix well until the mixture has thickened considerably. place on a greased plate and allow to cool completely before cutting through and serve
  • enjoy!

Ingredients

  • chado beni
  • garlic
  • pimento/seasoning pepper
  • thyme
  • chives
  • ginger (didn’t have any on hand when I made this batch)

Instructions

  • clean and wash all seasonings. chop/cut chives, chadobeni and thyme. do not cut the peppers and remove the seeds inside, as this is where all the wonderful flavours are. place in blender, add water and blend for a couple seconds (eye ball for desired consistency)
  • store in glass bottle (can last up to 1 month in your fridge)
  • this homemade green seasoning can be used in almost all cooking.
