With mango in season, it’s the perfect time to experiment with this delicious Mango Turnover recipe. It’s delicious and flavourful and is perfect to add to your picnic basket.

Ingredients

  • 1 pastry dough prepared (or you can check out my Chicken Pot Pie recipe to see how)
  • 1 cup ripe mango (about 1 large mango cut into cubes)
  • 1 teaspoon corn starch
  • a pinch of salt
  • a pinch of cinnamon (optional)
  • a pinch of nutmeg
  • 2 – 3 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  • preheat oven to 350 degrees f
  • in a skillet on low heat, add in all ingredients with the exception of the vanilla extract. mix well until combined
  • cook until softened (roughly 3-4 minutes)
  • once cooked, turn of heat and add vanilla extract. mix well.
  • allow the mango mixture to cool completely.
  • on a lightly floured counter top, add puff pastry dough. cut into desired shapes and size.
  • add about 1 teaspoon of the mango mixture to the center of one side to the cut dough and fold the other side over it, making sure to crimp (seal) the edges together using a little water.
  • place on a baking sheet lined with parchment paper and place in freezer to rest for 20-30 minutes.
  • remove and egg wash the top. bake in preheated oven for 25-30 minutes or until golden brown.
  • once baked, remove from the oven and allow to cool in the baking sheet for a few minutes.
  • remove and place on rack to cool completely before serving
  • enjoy!

Ingredients

  • basmati rice cooked
  • 1 large or 2 medium carrots shreded
  • salt to taste
  • 1 medium onion diced
  • 3 garlic gloves minced (more or less depending on taste)
  • half of 1 large sweet pepper (green, red)
  • 1 teaspoon of green seasoning
  • 1 tablepoon or more oil of choice
  • 1/4 teaspoon cayenne or black pepper (optional)
  • turkey sausage (the amount based on preference)
  • half of an onion thinly sliced
  • 2 gloves garlic minced
  • 1 tablespoon ketchup (optional)
  • 1/2 teaspoon green seasoning
  • 1/2 -1 tablespoon oil of choice

Instructions

for the carrot rice

  • on medium heat. place frying pan/skillet. add oil, seasonings and carrot. mix well. add salt and mix. allow to sautee for a couple minutes before adding rice. next add in rice and mix well. taste for flavour and add salt as needed. for a hint of heat add in cayenne or black pepper. stir and allow to sautee for a few more minutes then remove from heat.
  • once finished set aside

for the turkey sausage

  • in another frying pan, add oil and seasonings. mix well. next add in ketchup and stir. allow to sautee for a couple minutes. then add in sausage (sliced into your desired shape) mix well and allow to fry for a few minutes. remove from heat and serve with carrot rice.
  • enjoy!
