in a stand mixer place flour, sugar, yeast, grated coconut and baking powder. mix until combined. while mixer is on low speed , add oil and coconut milk
increase speed between2 and 4 and allow to knead for 8- 10 minutes
place dough in lightly greased bowl and place in a warm area of your kitchen to double in size
once risen, punch down the middle to release air and return to mixer to knead for a further 3 minutes
form into bread dough and place in loaf pan. allow to sit in warm area for another 45 minutes or until doubled in size. place in preheated oven to bake for 45-50 minutes depending on oven used. remove from oven once baked and allow to cool for 10 minutes in pan. then place on a rack to cool completely before cutting
