It’s Christmas time! And that means chocolate and malt beverages are on the menu list. Talking about malt, this delicious recipe Chocolate Malta Cake is the perfect dessert to have for your Christmas gathering. Ingredients

  • 1/2 cup margarine or butter, cubed
  • 1 250ml malta
  • 2 cups all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 11/2 cups sugar (1/2 more if desire)
  • 2/3 cup sour cream
  • 2 eggs, beaten
  • 11/2 teaspoon baking soda ( i used bob mill’s gluten free baking soda)
  • 3 teaspoons vanilla extract/essence
  • a pinch of salt to balance of flavours

For the Cream cheese glaze

  • 4 ounces cream cheese softened
  • 3/4 cups confectioner’s sugar/ icing sugar
  • 2-3 tablespoons milk

Instructions

  • preheat oven to 350 degrees f
  • in a bowl, mix the flour, salt and baking soda and set aside.
  • in a saucepan on medium low heat, add malta and butter. stir until margarine is melted.
  • remove from heat, next add in the cocoa powder and sugar. whisk until fully combined
  • transfer mixture to a large bowl. add sour cream, eggs and vanilla extract. mix well.
  • fold in flour mixture. once mixed, pour mixture into a 10″ bundt pan and tap a few times to get rid of air bubbles
  • place in preheated oven to bake (about 45-50 mins) or until a skewer inserted comes out clean.
  • once baked, remove from oven and allow to cool in pan for about 15 minutes. then remove and place on rack to cool completely
  • while cake is cooling, place softened butter and cream cheese in a stand mixer and beat for a couple of minutes until both are smooth in texture.
  • next add the icing sugar and mix well, adding the milk in tablespoons until the desired texture is reached.
  • pour the glaze all over the cooled cake. slice and serve

Who doesn’t like chocolate especially when it’s One Bowl Chocolate Cake (Simple)? This cake is simple and easy to make and is perfect for your celebrations. Give it a try today.

Ingredients

For the cake

  • 2 cups cake flour
  • 1 cup of sugar (for a sweeter cake add another cup of sugar)
  • 1/2 cup cocoa powder for baking)
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda (i used 1/2 teaspoon as i dont like the taste of baking soda)
  • 1 cup canola oil
  • 1 cup buttermilk
  • 1 cup hot water
  • 2 large eggs, slightly beaten

For the frosting

  • 1 cup of whipped topping mix powder
  • 1/2 cup very cold water
  • 2 tablespoons cocoa powder
  • 1 cup confectioners’ sugar

Instructions

For cake

  • preheat oven to 350 degrees f
  • grease and flour an 8 inch baking pan and set aside
  • in a large bowl add all dry ingredients (be sure that they are at room temperature and is sifted to avoid lumps in your cake)
  • add in buttermilk, eggs and oil. stir until combined. next add in hot water and mix well while adding. add batter to pan and tap lightly a few times to get rid of air bubbles.
  • place in preheated oven and bake for 35-40 minutes or until a skewer inserted in the middle comes out clean.
  • allow to cool completely before removing from pan and frost to liking

For frosting

  • in a mixer/ stand mixer, add mixing powder, confectioners’ sugar and cocoa powder. whisk on low speed and add the water. increase speed and whisk for 2-3 minutes (be sure to scrap the sides of the bowl). once finished, decorate
