Ingredients

  • 1 bunch of callaloo leaves
  • 1 cup of rice washed
  • 4 gloves of garlic, chopped
  • 2 medium or 1 large onion
  • salt to taste
  • 1/4 lb saltfish, soaked
  • 1 tablespoon green seasoning
  • 1/4 teaspoon cayenne pepper or 1 scotch bonet
  • 1/2 teaspoon dried basil
  • -1-2 teaspoon dried parsley
  • 1 cups fresh coconut milk (the store bought ones can be used as well)
  • water to be added as needed

Instructions

  • in a large pot, add washed callaloo leaves with some water (about 3/4 cup). allow to boil/cook until soft (can also be pressured for 20 minutes)
  • while callaloo leaves are cooking, move on to washing and seasoning the saltfish (note well that any meat of choice can be used such as salted beef, chicken, pig tail etc). set aside. move on to chopping the onion and garlic
  • once callaloo is cooked, add in coconut milk, salt fish, onion and garlic. allow to come to a boil before adding in washed rice. add in the rest of the seasonings. stir to combine and allow to cook. be sure to taste for flavour and in water if there is a need to add in more.
  • once cooked remove from heat, serve hot with avocadoes on the side
  • enjoy!

Ingredients

  • 4-5 cups plain flour
  • 1 cup whole wheat flour (optional)
  • 4 tablespoons brown sugar
  • 2 teaspoons yeast
  • 1 cup warm water (plus 1/4 cup for the blending of the green banana)
  • 3 medium sized slightly ripe green banana/green fig cooked
  • 1/4 cup olive oil or coconut oil
  • 2 tablespoons shortening, margarine or butter

Instructions

  • preheat oven at 350 degrees F
  • place the 1/4 cup of water and green banana/fig in a blender and blend for about 30 seconds
  • to a mixer start off by adding 3 cups of plain flour, whole wheat flour, sugar, yeast, shortening and the blended bananas. on low speed, mix until well combined
  • next add in the olive oil
  • add in the rest of the water and allow bread to form a dough (about 8 minutes if using a kitchenaid)
  • add the additional reserved flour as needed
  • once finished, place dough in a lightly greased bowl and allow it to rest for about an hour or until it has doubled in size
  • once risen, punch in the middle and return to the mixer to mix for an additional 3 minutes. once down place on a floured counter and form into two loaves. place in pan and allow to sit for another 45 mins until doubled in size
  • next place in preheated oven for about 35-40 mins (more or less depending on your oven make) or until golden brown
  • once finished remove from oven and allow to sit in the pans for about 5 mins and then remove from pan, place on a cooling rack to cool completely
  • serve with any side of your choice(can be served hot as well)
  • enjoy!
