Ingredients

  • 1 cup of basmati rice washed
  • 1 cup coconut milk
  • 1 cup water
  • 1 bay leaf
  • 5 cloves
  • 2 teaspoons homemade green seasoning
  • salt to taste
  • 1/4 teaspoon cayenne or black pepper
  • 4 cloves of garlic chopped
  • 1 medium sized onion chooped
  • 1 tablespoon oil oil
  • – 1 teaspoon tumeric powder

Instructions

  • add oil, green seasoning, garlic, onion and tumeric powder to a pot on medium heat. stir until well combined. allow to sautee for a couple of minutes
  • next add in washed basmati rice and mix well until rice is nicely coated with the tumeric mixture.
  • add in coconut milk, water, salt to taste, bay leaf, cloves and cayenne/ black pepper. give a good stir. cover, bring to a bowl and lower to the lowest heat and allow to simmer for about 15-20 minutes until cooked.
  • once cooked remove from heat (also remove bay leaf). serve hot with meat and veggie of choice
  • do enjoy!

please note the following:

  • coconut milk can be replaced with 1 cup of water if using butter (1 tablespoon) along with the olive oil

Ingredients

  • carite fish steak (seasoned overnight preferably)
  • 3 or more heaping tablespoons of curry powder
  • 4 tablespoons flour
  • 1 tablespoon oil
  • 1/2 – 1 tablespoon baking powder
  • 1 lb potato
  • 1 medium sized onion chopped
  • 3 cloves garlic chopped
  • 1/2 – 1 teaspoon black pepper (more or less depending on your heat tolerance) or cayenne
  • 1 tablespoon green seasoning
  • salt to taste
  • 2-3 cups water
  • 1 teaspoon dry parsley

Instructions

  • mix flour and baking powder together. coat fish in flour mixture. set aside.
  • place oil in frying pan on medium heat and bring to temperature. next add in fish careful not to overcrowd the pan
  • allow to fry until golden brown on one side and flip to the other side. once fried set aside.
  • wash, peel and cube potatoes. set aside. next in a pot on medium heat, add in oil, green seasoning, onion, garlic and and curry powder. mix until well combined. allow to fry for a couple of minutes making sure to stir constantly.
  • next add in 1 cup of water and bring to a boil. next add in potato and add in another cup of water and bring to a boil. next add in salt to taste, green seasoning, black pepper and parsley flakes. allow to cook until almost done. next add in fish and gently move it around to coat it with the curry and allow to simmer for about 3 minutes or so
  • serve with any side of your choice

Ingredients

  • 11/2 cups brown rice
  • 1 cup coconut milk
  • 1 cup water
  • 7 medium sized plum tomatoes
  • 1 cinnamon stick (you can also used the powder form 1/2 teaspoon)
  • 7 cloves
  • 1 large or 2 small bayleaves
  • green seasoning homemade
  • salt
  • dry parsley leaves
  • -dry basil
  • pimento peppers
  • onion
  • garlic

For the Chicken stew

  • chicken breasts
  • 1 irish potato (medium sized)
  • 1 carrot -water
  • onion
  • garlic
  • pimento
  • green seasoning homemade
  • salt
  • Guyanese Browning

Instructions

  • with pot on stove, add coconut milk followed by peppers, onion, garlic, spices and tomatoes
  • give a quick stir and bring to a boil
  • next add in washed rice and mix in well
  • add in salt to taste, homemade green seasoning and water. mix well
  • next do in with dry seasoning; parsley flakes and basil.
  • let rice boil until half cooked. once half cooked, place pressure rubber and pressure head on pot cover and pressure it for 10 mins
  • while tomato rice is cooking, move on to making the chicken stew. with pot on stove add 1 tablespoon of oil. next add in chicken, garlic, onion and pimento pepper. give it a really good mix.
  • next add in 1 tablespoon or so of browning and mix well. allow it to fry for a couple of minutes.
  • add in some water and season with salt and homemade green seasoning. (be sure to check for flavouring as you go along) add in potato and carrots and allow it to cook (add in any additional water at this point)
  • after 10 mins tomato rice should be finished. allow to cool before removing the pressure head. once that is done stir the pot so that all the flavours are evenly distributed throughout the pot
  • serve with a cole slaw or a simple green salad
