Pelau

Ingredients

  • 1 cup lentil peas thoroughly washed
  • 1 cup coconut milk
  • 1 cup brown rice washed
  • 11/2 lbs meat (chicken breast & wings mixed, or any meat of choice)
  • 6 cloves
  • water
  • onion chopped
  • garlic minced
  • bayleaf (optional)
  • cinnamon stick (optional)
  • browning
  • 2 tablespoons divided
  • homemade green seasoning
  • dried basil and parsley
  • cayenne pepper (or black pepper if that’s the preference)
  • 2-3 tablespoons Ketchup
  • salt to taste
  • frozen corn and peas
  • 1 large carrot finely chopped

Instructions:

  • place a skillet pot on the stove. add 1 tablespoon of oil
  • next add in 2 tablespoons or so of ketchup to oil and allow to fry for a couple minutes (be sure to stir during this process)
  • add peas to oil mixture and allow it to fry for a few minutes (about 5 mins)
  • once peas are done, remove from pot and set aside
  • using same skillet, add 1 tablespoon oil and add the meat
  • give it a quick stir and allow to fry for a few minutes. while meat is frying, give rice and good wash and set aside
  • once meat is ready, re-add the fried peas and stir it well. next go in with the coconut milk, rice, chopped onion and garlic, bayleaf, cinnamon stick and cloves. give it a mix. add in some water. next add in some homemade green seasoning, dried seasonings and salt. add in pepper of choice (please note you can add in a bit of sugar for balancing/bringing out flavour/taste)
  • stir it well and allow to come to a boil.
  • once pot has come to a boil, add in carrots and frozen corn and peas. mix well
  • at this point taste pot to make sure that the flavour profile is there as well as add in some more water and your browning. allow to boil again.
  • next add the pressure rubber and head to pot and allow it to pressure for 12 minutes
  • once done, allow to cool down considerable before removing the pressure head
  • stir up the pot to ensure that everything is evenly distributed throughout the pot.
  • this can be served with cole slaw or a simple salad to the side. avocado can be added as well.

Please note the following

  • any meat of choice can be used
  • i pressure my pelau simply because the flavour comes through more
  • you dont have to pressure it you can do the pelau the normal way
  • spices can be eliminated if its not your preference
  • you can use blackeyed peas as well
