Ingredients:
-Ham bone (left over from Christmas)
-1 cup Lentil Peas
-Salt to taste
-cassava
-Sweet potato
-corn dumplings
-Salt fish
-Cayenne pepper
-Homemade green seasoning
-Dry Basil
-Dry Parsley
-Coconut Powder milk (1 cup mixed)
-Water
-Onion
-Garlic
Instructions:
- start of by washing the lentil peas. I usually leave it to soak for about 20 mins before washing.
- add one cup of water to start off, into a pot. Next go in with the washed peas, onions, garlic and hambone.
- allow the peas to boil until nice and tender.
Corn Meal Dumplings
- 1/2 – 1 cup water
- 1 cup plain flour
- 2 tablespoons sugar
- a bit of butter
- a dash of baking powder
- couple tablespoons cornmeal
- in a bowl mix in water, baking powder, butter, sugar and mix well. next add in corn meal and flour gradually. knead until a smooth dough is formed. set aside
- check pot occasionally .
- for the saltfish: ensure that its properly washed to get rid of the excessive salt that has be preserving it and seasoned with green homemade seasoning (this gives it a nice flavour).
- add saltfish to pot. give it a quick stir
- next add in coconut milk. bring to a boil.
- add in provisions of choice. stir it together
- allow to come to a boil once more and add dumplings and seasonings
- also add in carrots.
- taste frequently for flavour etc.
- once finished, served hot
Please note the following:
– you can add any ground provisions of your choice
- the recipe can be doubled if you are having guest over and want to serve them this delicious soup
- any meat can be added
- sugar, butter and baking powder can be exempted from the cornmeal dumplings
