Ripe Breadfruit Oat Bread

Ingredients

  • 1 cup mashed ripe breadfruit
  • 1/4 cup grated coconut
  • 1-2 cup rolled oats
  • 5 tablespoons brown sugar
  • 2 teaspoons yeast
  • 1/4 cup olive oil
  • 11/4 cups warm water (more or less as needed)
  • 3 -3 1/2 cups flour (or more as needed depending on the wetness of the dough)

Instructions

  • preheat oven to 350 degress F
  • in a mixing bowl, add ripe breadfruit, coconut, oats , sugar, flour and yeast. on low speed mix until well combined
  • add oil and water and allow dough to form.
  • once dough is formed placed in a lightly greased bowl to rest for about an hour
  • after that time, place dough back in mixer and mix for another 3 minutes
  • form into bread, place in lightly greased loaf pan and allow to sit for another 45 minutes
  • place bread in oven to bake for about 50 to 55 minutes depending on the stove you have.
  • once finished remove from oven and allow to cool for 5 minutes in pan before removing it and placing it on a rack to finish cool
