Ingredients
- 3 cups cake flour
- 2 tablespoon all purpose flour for coating the fruits
- 1 1/2 – 2 cups sugar
- 1 1/2 cups margarine or butter, softened
- 2 cups mixed cherry
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon cinnamon powder
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon lime juice or 1 teaspoon lime rind
- 2 teaspoon vanilla extract
- 1 teaspoon or more almond extract
- 3 eggs
- 1 cup buttermilk (evaporated, or whole milk)
Instructions
- preheat oven to 350 degrees f.
- in a large bowl, add butter or margarine and mix for a couple seconds. next add sugar and cream until light and fluffy.
- next add eggs one at a time and mix well. add lime juice or rind and vanilla and almond extract and mix until combined. set aside.
- add dry ingredients in another bowl and mix well. set aside. add reserved flour to mixed cherry and coat very well. set aside.
- next add flour mixture in three parts alternating with milk ending with flour mixture. remember to gently fold in the flour.
- next add cherry and slowly mix in.
- place batter in a greased and floured cake pan and tap a few times to get rid of any air bubbles. place in oven and bake for approximately one hour depending on your oven and the cake pan used.
- remove from oven once a skewer inserted in the middle comes out clean.
- allow to cool for 10 minutes in the pan before removing and place on rack to cool completely. slice and enjoy!
