Ingredients
- 2 cups self rising flour
- 250 grams (8 ounces ) margarine or butter, softened (not too soft)
- 1 cup sugar
- 1/3 cup buttermilk/ coconut milk
- 4 eggs
- 3/4 tablespoon vanilla extract
- 1/4 tablespoon coconut extract
- 1/4 cup shredded coconut
- 1/4 cup cherry
- 1/2 teaspoon lime juice (optional)
Instructions
- preheat oven to 350 degrees
- in a mixing bowl, add butter and sugar and cream until light and fluffy.
- add in eggs, one at a time mixing well after each addition. next go in with the vanilla and coconut extracts.
- mix. gently fold in the flour until just combined. add in the cherries and the coconut and fold in gently.
- place batter in prepared pan (i used 4 inch cake molds) and place in oven to bake until a skewer inserted comes out clean (30-35 minutes)
- allow to cool completely in the molds before removing.
- cut and enjoy!
