INGREDIENTS
- 2 cups flour
- 3/4-1cup sugar
- 1 cup grated carrot
- 1 cup oil
- 1/4 cup grated coconut
- 1/4 finely chopped pecans or walnut
- 1 teaspoon cinnamon powder
- 1/2 teaspoon ginger powder
- 1/4-1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon tonka bean grated
- 1/4 teaspoon ground cloves
- 1/8 teaspoon salt
- 11/2 tablespoons milk
- 1 teaspoon vanilla extract
- 3 eggs
- 1 teaspoon lime juice
Instructions
- preheat oven to 375 degrees
- in a large bowl, mix in flour, spices, baking powder and salt. whisk well until combined. set it aside until ready for use.
- in another bowl, add in eggs, sugar, oil, milk, vanilla and lime juice. whisk unit combined. add in the dry mixture to the wet and gently fold it in. do not over mix.
- add in shredded/grated carrot, nuts and coconut. fold in gently. place mixture in a lined muffin pan.
- tap lightly to get rid of any excess air bubbles. place in preheated oven to bake for 25 minutes.
- once baked, remove from oven and allow to cool in pan (10 minutes) before placing on a rack to cool completely.
