Ingredients
- 2 1/2 cups regular flour
- 1/2-3/4 cups sugar (depends on your level of sweetness)
- 1/2 cup margarine or butter (8 ounces) softened
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon powder
- 1 teaspoon ground ginger
- 1/2-1 teaspoon ground cloves
- 1/2 teaspoon all spice
- 1/2 teaspoon tonka bean, grated
- 3/4 teaspoon grated nutmeg
- 1/2 teaspoon or more of freshly grated ginger
- 2 tablespoons milk
- 1 tablespoon oil
- 1 large egg
- 2 tablespoons (or more ) of molasses
- 1 cup hot water
- 1 teaspoon vanilla extract
Instructions
- preheat oven to 350 degrees f
- in a large bowl, add all spices, baking soda and salt. set aside until ready for use.
- next, in a stand mixer, add softened margarine and beat for a couple of seconds to break it down. then add sugar and mix until light and fluffy.
- add in egg, extract and grated ginger and beat until well combined. go in with the dry ingredients, milk and oil. mix on medium speed and slowly add hot water until the mixture is just combined.
- using a spatula, gently fold in any excess flour and pour batter into prepared pan.
- place in preheated oven and bake until a skewer inserted comes out clean. allow the cake to cool for 10 minutes in the pan before removing and placing on a rack to cool completely.
- this delicious cake can be served with vanilla ice cream or any of your choice.
