Ingredients
- 2 lbs chicken leg quarters, cleaned and seasoned
- 2 tablespoons margarine/ butter
- 1 medium onion, finely sliced
For the sauce
- 1 tablespoon corn starch + 1/4 water
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 cup water
- 4 garlic cloves, minced
- 1 tablespoon freshly grated ginger
- 1/4 cup brown sugar
Instructions
- preheat oven to 400 degrees f(200 degrees c)
- mix starch and 1/4 water until combined and set aside.
- next in a skillet on medium heat, add sugar, honey, soy sauce, ginger, garlic and water. mix until combined and allow to come to a simmer. add in the corn starch mixture and mix well. allow to cook until thicken (about 3 minutes).
- once down, remove from heat and allow to cool.
- in another skillet, add margarine and melt. next, add in the onions and sautee for a couple of minutes on medium low heat. add chicken skin down to sear for about 3 minutes and turn on the other side to do the same.
- once down, add to a lightly oiled or butter baking dish. add half of the sauce, making sure to coat the chicken well.
- place in preheated oven and bake for 20 minutes in the first instance. remove, flip the chicken on the other side and pour the remaining sauce all over it.
- return back to the oven to bake for a further 30 minutes and remove. serve with any dish of side.
