Ingredients
- 11/2 cups all purpose flour plus more for any additional flour needed
- 1/4 cup whole wheat flour
- 1 cup of mixed fruits dried
- 1 teaspoon yeast
- 31/2 tablespoons sugar
- 1 teaspoon vanilla essence
- 1/4-1/2 teaspoon freshly grated nutmeg
- 1 teaspoon cinnamon powder
- 1/4 teaspoon clove powder
- 1/4 teaspoon salt
- 2 tablespoons softened margarine or butter
- 2 tablespoons oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon tonka bean grated
- 3/4 cups warm milk or coconut milk
Instructions
- preheat oven to 350 degrees F
- in a mixer or large bowl add all dried ingredients and fruits. mix until combined
- next, with mixer on low speed, add vanilla essence and oil. mix until combined. slowly add warm milk and mix until a sticky dough is formed (about 8 minutes)
- next place in lightly oil bowl and allow to proof in a warm area for about an hour or until it has doubled inside
- once dough has risen, punch in middle to deflate and knead for a further 3 minutes. place on lightly floured countertop and form into bread. place in lightly oil loaf pan. allow to raise for a further 45 or more minutes or until it has doubled in size
- place in preheated oven and allow to bake for 50 to 55 minutes (depending on the oven used) or until it is golden brown
- remove from oven. allow to cool in pan for 10 minutes. remove from pan and place on cooling rack to cool completely
- slice and enjoy!
